  1. Éplucher laver et couper en dés les pommes de terre les verser dans une casserole avec de l'eau, saler, cuisson +/-8 à 10 min, enduute les égouter et réserver.
  2. Pendant ce temps laver les poireaux, enlever la première couche et couper en morceaux.
  3. Dans une poêle faire revenir les lardons quelques minutes, ensuite réserver.(Pas besoin d'huile, les lardons sont assez gras) Dans la même poêle verser les poireaux coupés.
  4. Saler, poivrer l faire revenir quelques minutes et verser 1/2 verre d’eau, cuisson jusqu’à absorption du jus de cuisson, réserver.
  5. Préchauffer le four à 180C Dans un saladier, casser 2oeufs, saler, poivrer, herbes de Provence ou origan, mélanger un peu, verser la mozzarella, mélanger.
  6. Ajouter les poireaux qui ont refroidis, les lardons, les pommes de terre égouttées et refroidies, mélanger le tout.
  7. Foncer un moule avec la pâte brisée, à l aide d une fourchette piquer le fond. Verser l appareil et bien repartir. Saupoudrer de parmesan et d'herbes de Provence ou Origan. Cuisson à 180C +/- 35 min
